Candied Yam Muffins

Inspired by the classic sweet potato casserole topped with toasted marshmallows, these muffins combine the creamy sweetness of yams with cozy spices and a hint of vanilla. Finished with a marshmallow topping, they’re perfect for breakfast, brunch, or a sweet treat to accompany your morning coffee. Ingredients:
29 ounces canned yams, drained and mashed, or 2 cups mashed sweet potato or pumpkin puree
1 stick (1/2 cup) butter, at room temperature
1/2 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
Dash of ground cloves
1/2 teaspoon salt
Corn syrup, as needed to adhere marshmallows
1 bag miniature marshmallows
Directions:
In a large mixing bowl, combine the drained and mashed yams (or sweet potato or pumpkin purée), butter, brown sugar, and sugar. Mix well until smooth.
Add the eggs and vanilla to the mixture and blend until thoroughly combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, clove, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined—avoid over-mixing.
Divide the batter evenly into prepared muffin pans.
Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until muffins are set and a toothpick comes out clean.
Once muffins are baked, lightly brush the center of each with corn syrup to act as glue.
Place marshmallows over the glazed centers, and put the muffins under the broiler for no more than 2 minutes to toast the marshmallows lightly. Watch carefully to prevent burning.
