Pumpkin Pancakes

As the leaves start to turn and a chill fills the air, there’s no better way to embrace the cozy fall season than with these warm and fluffy pumpkin pancakes. Packed with the comforting flavors of pumpkin and a hint of spice, they make for the perfect autumn breakfast or brunch. Whether you’re gathering with family or just enjoying a quiet morning, these pancakes bring all the best flavors of fall to your plate. Top them with a pat of butter, a drizzle of syrup, a dusting of powdered sugar, or your favorite topping, and you’ve got yourself a seasonal treat that feels like a warm hug.





Ingredients:

  • 2 cups pumpkin or sweet potato puree

  • 1/2 cup packed brown sugar

  • 2 cups buttermilk

  • 4 tablespoons melted butter

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 2 cups all-purpose flour

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 1–2 teaspoons pumpkin spice seasoning (or 1 teaspoon cinnamon)

  • 1/2 teaspoon nutmeg (with a dash of ground ginger, clove, and allspice, if available)

  • Optional add-ins: pecans or chocolate chips



Directions:

  1. Prepare the wet ingredients:In a large bowl, combine the pumpkin (or sweet potato) puree, brown sugar, melted butter, buttermilk, eggs, and vanilla extract. Mix well until smooth and combined.

  2. Add the dry ingredients:In a separate bowl, whisk together the flour, baking soda, salt, and spices (pumpkin spice seasoning, nutmeg, and any additional spices like ginger, clove, or allspice). Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated. Be careful not to overmix the batter.

  3. Cooking instructions:Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Once hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2–3 minutes until bubbles form on the surface and the edges begin to set. Flip the pancakes and cook for an additional 2–3 minutes, or until golden brown on both sides.

  4. Serve and enjoy:Stack the pancakes high and serve them with your favorite toppings—such as butter, syrup, whipped cream, or even a dusting of powdered sugar. For an extra touch, try adding pecans or chocolate chips to the batter for a delicious variation.
